So I USED to eat at Red Lobster with my family and I would always, always, always, order the shrimp scampi, it was so amazing! This was my first go round with shrimp scampi and well I found no other recipe that made shrimp scampi with coconut oil or grass-fed butter, much less a gluten-free version.
I decided to create my own version of the combination!

Gluten-Free Shrimp Scampi Pizza Recipe
Total Time: 45-45 minutes
Makes: 1 10-inch pizza
Gluten-Free Pizza Crust
- 1 cup tapioca flour/starch
- ½ cup + 2 Tbsp. white or brown rice flour
- 1 tsp. salt
- ½ tsp. oregano
- ¼ tsp. white pepper
- ¼ tsp. black pepper
- Pinch garlic powder
- ½ cup grass-fed milk
- 2 Tbsp. grass-fed butter
- 1 egg
- ¾ cup grass-fed cheddar cheese
- 1 Tbsp. coconut oil, melted
Steps to crEATe:
1.) Pre heat oven to 500°. Combine flours and spices/herbs in large mixing bowl. Set aside.
2.) In a saucepan on medium heat, combine milk, butter, coconut oil, and salt and bring to a simmer. Remove from heat when it starts to bubble. Let cool for 2 minutes.
3.) Add warm mixture to dry ingredients. Let the mixture cool for 5 minutes.When the cream/water mixture is heated, add it to the starch and stir it all together. It will start to clump together, which is fine. Let the mixture cool for five minutes. As it cools, preheat your oven to 500 degrees.
4.) Add whisked egg to mixture. Add cheese. Mix well until a slightly doughy mixture forms. It WON’T act or look like dough, but it makes an AWESOME crust.
5.) Place the dough on a pizza stone (or pan if you don’t have a stone). Spread with a spreading tool as thin as you can since it will rise slightly.
6.) With a fork, poke a few holes throughout dough before baking. Bake in oven for 12 minutes. Remove and let cool while preparing Shrimp Scampi (see below)!
Shrimp Scampi Pizza
- 1 pound wild-caught shrimp, peeled completely
- 2 Tbsp. coconut oil
- 2 Tbsp. butter, Kerrygold
- ½ tsp. red pepper flakes
- 3 cloves garlic, chopped
- 1 Tbsp. lemon juice
- 1 Tbsp. parsley, dried
- 1 cup cheddar cheese, shredded, KerryGold
- ½ cup bell pepper, chopped/diced (I used an organic orange)
- ½ cup red onions, chopped/diced
Steps to crEATe:
1.) Heat the oil and melt the butter in a pan.
2.) Add the red chili pepper flakes and garlic and sauté, about 1 minute.
3.) Add the shrimp and sauté for 3 minutes, stirring frequently.
4.) Add the lemon juice, bring to bubble.
5.) Simmer for about 3-5 minutes.
6.) Add the cheese , add the shrimp, and vegetable toppings to crust. Add more cheese if desired (I did!)
7.) Bake in a preheated 500° oven until golden brown, about 5-8 minutes.
8.) Sprinkle with parsley and let cool. Serve warm!
