They look good but I refrain from using potato starch, as well as rice flour and cornstarch as they are unhealthy……can one substitute coconut, almond or others as well?

I’ve studied the flours and starches you mention and would not consider them “unhealthy” as a general statement. CAN they be unhealthy? Yes, depending on your current state of health. When I use these flours and starches, I am sure to combine them with saturated fat and protein for optimal blood sugar response and hormonal balance.

You can sub tapioca starch for potato.

These look amazing… but I’m allergic to rice (and tapioca). Any sub suggestions for the rice flour?
